Vegas, you’ve come a long way, baby. It wasn’t that long ago — like, five years, really — that you could list on one hand the number of actually legitimate cocktail bars in Sin City, the world capital of people-coming-here-specifically-to-drink, without including places on the Strip serving blueberry vodka mixed with Sprite and lemonade and calling it a “cocktail.”
Like everything else in Vegas, change comes slow, and then it comes all at once at a nausea-inducing speed. Happily, this means you can now get a pretty decent drink in a lot of places around the city. And the past couple of years in particular have brought about a slew of new bar openings that are seriously stepping up the city’s cocktail and spirits game.
